Meet Beth Coons with Pittsburgh Blue Steakhouse in downtown Rochester. As general manager, Beth juggles a lot. How does she get it all done? Find out below as she explains the daily challenges, and rewards, of being a female entrepreneur.

About Pittsburgh Blue

Pittsburgh Blue Steakhouse opened in April 2019, finally giving Rochester the steakhouse it deserves. We offer dry aged and naturally aged beef hand cut by master butchers along with fresh seafood and the best burgers around. Pittsburgh Blue has two distinctive private rooms to accommodate special events. Our team is part of Interconnection, allowing us to give back to the community and help local charities.

What are the daily challenges you face as a female entrepreneur? What has been the biggest reward?

The biggest task is getting it all done in a day. I make sure to write it down and cross things off my list, trying not to leave it for tomorrow. I continue to learn and grow, taking classes through our umbrella company or online. Currently, I am taking Anna Wintour's class on Creativity and Leadership. I try to keep the mindset "in every adversity lies the seed of an equal or greater opportunity." My biggest reward is my staff and watching them learn and grow. Some moving on to bigger things others becoming the best in their field.

How do you balance your business and your personal life?

Our umbrella company, Parasole, gives me a great work life balance. They understand the challenges of being a single mom and raising a teenager. I have found a great team to work alongside of that I consider my family. I make sure I get my daily workout in first thing in the morning to start my day off right. I get outside as much as possible on my days off enjoying skiing, stand up paddle boarding and being anywhere on or near water.

What new projects or future plans are you looking forward to?

Our hidden gem is our late night happy hour, we have $3, $5 and $7 options. My favorite is Thai Lettuce Chicken Wraps. We are opening up for Easter Brunch and Mothers Day Brunch offering an extensive buffet with a carving station. We have a wine dinner with Orin Swift coming up March 12. Pittsburgh Blue's one year anniversary celebration will be the first week of April and we have some fun ideas going with the Hilton for music and food on the fifth floor patio.
