Benedict’s Rochester and Paul Berglund are excited to announce an August series of dinners in which Paul will take over the kitchen at Benedict’s after hours and serve meticulously crafted, approachable small plates and pastas. Paul explains the limited-run series this way: “We will keep this concept simple, with a focused menu of small plates and pastas made by hand, using the highest quality ingredients at the peak of their season.  We will make each item daily, serving only the freshest food from our region.  So, when we sell out, we sell out.”  No reservations, all guests are welcome on a first-come, first-served basis.

This series of pop up dinners will highlight the rich and diverse bounty of Southeast Minnesota and the greater region. Given the time of year, you can expect the freshest summer foods available, served in a fun, casual environment.

Paul Berglund is a James Beard award-winning chef, formerly of The Bachelor Farmer in Minneapolis, where he and his team created an iconic cuisine that helped define our region’s culinary identity.  Paul’s cooking career started with an almost seven-year stint at the acclaimed Oakland, CA restaurant Oliveto, where he mastered the foundations of Italian cooking.
